Mia Rose is stuck in a predicament: she has to marry the prince. But she would rather be a hunter, roaming the lands and bringing the murderous Gwyrach to justice. So she hatches a plan but things don’t work out as planned and then discovers that she is the very thing that she hates, she is a Gwyrach.
One thing I loved about this book was the ending and how plot twist after plot twists were introduced. It was a little cliché though but touched on important themes like feminism, misogyny, the freedom to love whoever we want to love with a diverse cast of characters. It was an enjoyable read, with lots of tropes though and I had some issues with it but that will be discussed in a more in-depth review. But today’s post is about something else. Something delicious.
In the book, Mia thinks about a time when her family ate together, a reminder of happier times.
A memory came unbidden: a meal she’d shared with her family before her mother died. They’d gathered at their simple square table, laughing and swapping stories, tearing off chunks of warm potato cake and dipping them into a puckered tin of sweet brown mustard. Her mother had kissed her father that night, really kissed him. When Mia and Angelyne heckled her for it, she’d raised her pint of stonemalt and made a toast.
So I’m going to share a recipe for Potato Cake. I know right, I’m finally doing a food post.
I did some research and found out that there are two versions, the baked one and the fried one. I decided to go with the baked version which I feel is healthier. Let’s dig in!
- 3 medium-sized potatoes
- 2 tablespoon butter
- 2 eggs
- salt and pepper
- 2 tablespoon onion (chopped)
- 1 tablespoon milk
- 4 tablespoons bread crumbs
- Cook potatoes in salty water until cooked through and you can pierce it easily with a fork. (it’s better to boil in salty water, so you don’t end up with bland potatoes)
- Fry onions over low heat until its softened and set aside
- Put the cooked potatoes in a bowl and mash them, you can use a potato masher, a food mill or a small mortar until all the lumps disappear.
- Add the eggs, onion, milk to the mashed potatoes and mix. Add salt and pepper to taste. (You can also add grated cheese or ham if you want. Fry the ham a little with the onions before adding though.)
- Preheat the oven to 180°C – 190°C
- Line a baking pan with parchment paper or melted butter and sprinkle a layer of breadcrumbs on it.
- Now its time to shape the paste into cakes. You can use a ring mould, you can use your hands or you can scoop the potato mixture into a small bowl coated with a little cooking oil so it doesn’t stick and then turn it over on the parchment paper to get a nice shape. You can make it 2 inches thick or as thick as you want it.
- Press down slightly with fingers or spatula and sprinkles bread crumbs on top of each cake. You could also sprinkle with grated cheese if you like.
- Bake in the oven for 15-30 minutes until golden and ta-da you are done.
- Go forth and feast on your potato cakes, serve warm.
